Harissa is hot red sauce paste used commonly in North African cuisine as a seasoning ingredient or as a side to dip bread into. Its ingredients vary, but typically contains chili peppers, garlic, coriander, cumin, salt and sometimes tomatoes. It is made by crushing dried hot red peppers with garlic, spices, olive oil and sometimes tomato paste or red pepper paste to produce a flavouful paste to season tagines. Le Phare du Cap Bon is a brand of harissa produced in Tunisia and contains red hot peppers, garlic, coriander, carvi, and salt. 

Harissa is a versatile paste that can be used in a variety of dishes. The recipe below is a non-traditional Moroccan inspired dish using harissa. Chickpeas, eggplant, and potatoes are tossed in a harissa marinade and roasted in the oven, creating a rich and decadent vegetarian feast!
