Injera is an East-African sourdough flatbread, cooked over a griddle, with a fantastically spongy texture. It is a national dish of Ethiopia and Eritrea and is served with stews and curries. It serves as both the plate and the eating utensil, and the spongy texture makes it the perfect vessel for scooping up curries.
Injera is made with teff, a tiny round grain that is high in iron content and contains almost no gluten, making it a great option for those following a gluten-free diet. The dough is fermented for days, giving rise to the sourdough flavour in the dough.
