Semolina is the roughly milled endosperm of durum wheat and is most commonly used in pasta and pastry dishes. Semolina is low in fat and high in protein! A 1/4 cup of semolina has 0 grams of fat and 5 grams of protein.
One of our favourite ways to use coarse semolina #2 is in a traditional breakfast pudding dish called Ma'Mounia. It is the Syrian version of rice pudding. It's smooth, velvety and absolutely delicious!
